You will make handmade pasta following the traditional recipes and method: eggs, flours and MATTARELLO (Rolling pin)

- Potato Gnocchi made from PDO potatoes from Bologna.
- Tortelloni (filled pasta) with ricotta cheese
- Garganelli (a macaroni shaped pasta with pointed ends) with vegetables grown using the “Integrated Control” method.

 

FROM FARM TO TABLE

Our food follows the concept of seasonality.
While having reguard for local farmer.
In particular, the so called INTEGRATED CONTROL is used because it combines natural cultivation techniques such as useful insects, mulch, crop rotation, the use of organic fertilizers, green house crops using synthetic substances however in reduced quantities. This prevents damage to the environment and towards people’s health, drastically reducing and in some cases completely eliminating the number of pest-control methods. However, this is a way of thinking that goes beyond  simple crop cultivation and translates into respect for nature and the succession of the seasons therefore avoiding the use of hormones, fertilizers and colouring.

The whole experience takes from 3 to 4 hours depending on the number of partecipants and the types of class.
